I have been in telecom for 25 years. I have never programmed an IP Office.

Customer has an IP Office 500 V2.

At night customer lines reference extension 507.

507 references auto attendant code *61.

How do we change this not to play an auto attendant greeting, but to ring externally to a toll free answering service phone number?

Forward Ext. 507 to the answering service number. You may have to uncheck "Inhibit Off-Switch Forward/Transfer" in System > Telephony > Telephony and check "Allow Analog Trunk to Trunk Connect" on the Analogue Options tab if you are using LS lines
