here is some work I did over the past 2 weekends. large house full of AV gear, CCTV, various computers. originally had a structured media panel that was removed and rack was installed. I was called in to clean up the cabling, install a patch panel, re-terminate all the jacks to 'B' standard, trace out and label. This past weekend I also installed a second 24 port patch panel at the rack and a 12 port patch panel in a closet.
my personal favorite: there was one drop the AV company just could not get to work...they apparently spent hours terminating and reterminating, this is how they left it!

Any time I make a penetration through a hard ceiling I use a sleeve and fire block, if I'm only going through a drop ceiling tile I will just use a sleeve. Going through walls is a different matter and will depend on how the wall is built of it it is a fire block.
