Caller reaches auto attendant and wants to dial extension (200 series), and dial first digit 2 but waits too long to dial 2nd or third digit (5 seconds) and is then transferred off to dial option 2.
What field in Director controls that so I can adjust the time up a couple of seconds.

Pretty sure that timer is set in the area only Shoretel TAC has access to.
If you want to extend it you will probably have to contact TAC.

If I understand your question right , your asking about the AA Dial Timer, thats in the AA menu Right above the area you can type the Greeting out under Timeout
