We are currently using POTS lines going into the SL1100 and would like to switch to 10 SIP Trunks.
I am trying to determine what equipment and licensing would be needed. I believe we need a new card (VOIP Daughter Board??) but I'm unclear how many SIP Trunks this enables and how we get more (buy licensing, or additional cards). New to the PBX and to SIP Trunk so any help would be greatly appreciated.

You will need a VOIP daughter board, A MEMDB and SIP licenses. In my region you get 4 SIP trunk licenses included with the system so I would only need 6 SIP licenses. Not sure how this licensing is done in the US..

And then is it safe to assume I will only have a single ethernet cable going into the PBX that will handle data for all 10 SIP Trunks. I am guessing this plugs into the VOIP daughter board.

You are correct, 1 VoIP daughter board, 1 network connection
