Check out the wiki on TM, it's very useful : TM Wiki I use my screen share via VNC at least every other day and I love it! Also, not to mention... it was super easy to setup! System Pref-> Sharing-> Screen Sharing copy and paste the VNC address it creates and you're golden! If you're looking for a good VNC client for Mac, check out ChickeOfTheVNC : https://sourceforge.net/projects/cotvnc/ Super easy to use, especially in conjunction with UltraVNC (on those pesky w1nd0z3 machines)

Depends on what you want to do. I still have only 1GB in my Mac mini and it is running my entire media library. It is not well suited for Garageband's large files, but still works. It is not the fastest with Roxio Toast Titanium either.... but again, it still works.
I have 4GB on my Macbook, with the 2.4GHz processor and it will run any and many things at once.
So... in the end, what apps are you looking at running?

really I got it to do iMovie and just get familiar with it. I will probably do more in the future. I might even get to the point that I do my photoshop stuff on it.

If you want to do large iMovie and GIMP photo projects, then I would suggest upgrading to the 2GB RAM. I do GIMP edits on my mini and it looks amazingly good on the projector, with the DVI output... but it's a little slow for my liking. That's why I use my Macbook for more processor intense applications.
