I don't think 1/2 inch nipples would be big enough. I like at least a 1" inch nipple. The bigger the nipple the better! I guess it's a personal preference.
Not saying it couldn't happen but I've never seen the need for nail plates with steel studs. The 1-1/4" rule still applies but there is always a way to easily re-route a cable to avoid those situations where you can't maintain it.
I use Arlington brand snap-in bushings on the top of studs, inside panels, etc. 1/2 or 3/4 inch most commonly found at the supply houses. Have also used the red stud bushings to go between stud bays.
